My Snacking Addiction: PB&J

It's scary for me to admit this: I eat peanut butter and jelly every day of my life. 

It's true. Whether its on an english muffin, in oatmeal, or on a sandwich. I just can't seem to go a day without this sweet combo. 

My snack today was a slightly different variation on this favorite. 


Homemade almond butter with strawberry jam on graham crackers. I'm branching out =]

Glazed Cinnamon Toast Crunch Cupcakes

I may or may not have a sweet tooth problem. 
And the only cure is these cupcakes.


 Glazed Cinnamon Toast Crunch Cupcakes. This cereal has always been a favorite of mine. It's crunchy, cinnamony, and sugary. What could be better? Oh, when it's all baked into a cupcake!

Glazed Cinnamon Toast Crunch Cupcakes 
small batch, makes 4 cupcakes

3/4 cup flour
1/4 tsp salt
1/4 cup oil
1/4 cup plus 2 tbsp non-dairy milk
1 tsp vanilla extract
1 tsp baking powder
1/4 cup sugar
1/2 tsp cinnamon
¼ cup lightly crushed cinnamon toast crunch cereal 

Glaze:
3 1/2 Tbsp powdered sugar
1 Tbsp almond milk
1/8 tsp cinnamon

Preheat the oven to 335 degrees. Mix all of the ingredients together in a bowl. Pour into lined a lined muffin pan and bake for about 15 minutes. 


The cupcakes will come out light brown and puffy. Mix together glaze and pour over top. 



Finish off with a few more crushed up cereal pieces and enjoy with a big mug of coffee or glass of almond milk!

Healthy Chocolate Milkshake....No, Really!

There really is no better way to wake up than an early morning run and a chocolate milkshake. amiright?


I know exactly what you're thinking. There is no way that a chocolate milkshake can be both healthy and delicious. 

Well, I'm sorry, but you are soooo wrong =] Chocolate has always been my biggest guilty pleasure food. There's just nothing like the feeling you get after a bit of this sweet treat. I think that this milkshake tastes so much better than one you can get at any ice cream shop and, not only that, its good for you and you can make it at home! 


This frothy and rich beverage takes seconds to whip up and only has 130-140 calories per shake! What could be better?

Healthy Chocolate Milkshake

1 large frozen banana (The riper the better)
2/3 cup almond milk
1/2 tsp vanilla extract
1 Tbsp unsweetened cocoa powder

Place all of the ingredients in a blender like so:


Blend until smooth. 


The creamy consistency and slight fruitiness from the banana really make this the perfect treat anytime. Its even acceptable for breakfast! Top with shredded coconut, blueberries, or more chocolate!

Chocolate Chip Pumpkin Cupcakes

I love baked goods more than any human probably should. There's just something about a freshly baked, moist and gooey treat. I'm obsessed.

And if that item includes chocolate its automatically a winner.

One of my favorite flavors is pumpkin. Its really kind of an obsession of mine XP When fall rolls around I go a bit crazy with the pumpkin lattes, pies, muffins, and cookies.

I know, I know its the middle of July but I just had to make something pumpkiny or I was going to explode. And you will too as soon as you taste these mouth watering cross between a cupcake and muffin...that's right...it's a cupfin. 


Chocolate Chip Pumpkin Cupcake

2 cups canned pumpkin (I keep plenty of these in my cabinets)
1 cup all purpose flour

1 1/2 cups whole wheat flour (or just more ap flour)
2 cups brown sugar
2/3 cup vegetable oil (feel free to sub with an alternative like coconut oil or applesauce)
1/2 cup non-dairy milk
2 tsps vanilla extract
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup chocolate chips

Preheat oven to 350°F. In a large mixing bowl, mix together wet ingredients plus sugar until thoroughly combined. 


In a separate bowl, mix together dry ingredients and add slowly to wet while stirring. 


Stir in chocolate chips and pour the batter into lined muffin tins. 

Bake for 22-23 minutes, cool, and enjoy!

Peanut Butter Cookie Overnight Oats


mmmmmm...oatmeal.


Wait...cold oatmeal that tastes like a peanut butter cookie? That's right.

I have been obsessed with oatmeal ever since I can remember but I hadn't even heard of overnight oats until very recently. Naturally, it intrigued me. The idea of putting everything into a bowl the night before and just opening it up in the morning is great. Why didn't I think of it?! This oatmeal is so rich and creamy it really is like a spoonful of peanut butter cookie!

Peanut Butter Cookie Overnight Oats

1/2 cup dry oats
1 cup non-dairy milk
1 Tbsp melted peanut butter (pop it in the microwave for about 25 seconds until liquidy)
1/2 tsp vanilla extract
sweetener of choice (I used maple syrup)

The night before:
Combine the oats, milk, peanut butter, and vanilla in an airtight storage container. Place in fridge for a minimum of 2 hours.

Now for the most difficult part of this recipe...waiting!




In the morning you will have perfectly creamy, fluffy, peanut buttery oats! Just stir in your sweetener, add any toppings you want, and EAT!

The Space Blahs

I will forever be unhappy with how my room looks. To me, a bedroom should be a quiet sanctuary that can be used to clear the mind and renew the spirit. It should also reflect the dwellers personality. I am in the process of going through and getting rid of unnecessary clutter in my room. 

Until I am satisfied, I keep looking at inspirational pictures online.





The Cat Lady Vegan Chocolate Cake

Forget about diamonds, chocolate really is a girl's best friend. It is there through thick, thin, sickness, health, breakups, and just whenever. 

Today for lunch I was really craving chocolate cake (don't judge me) so I turned to this recipe for One-Minute Chocolate Cake from Chocolate Covered Katie

I used whole wheat flour instead of spelt and substituted natural applesauce instead of the oil to make it a bit lighter. 

You just mix up all of the ingredients in a bowl, transfer it to a microwaveable container, and zap it. I'd say it came out looking rather pretty...


..until I tried to take it out of the ramekin. It broke in half but still tasted great XP

What I Ate Wednesday {2}

 I can't believe its August already and I'll be going back to school soon. It's crazy how fast summer goes. 

I started off the day with a large bowl of oatmeal (of course) with blueberries, coconut flakes, and almond milk. I pretty much have oatmeal every morning. It's a problem, a delicious, delicious problem. 


My sister and I went out to lunch at a little cafe fairly close to the house. 
We each got a smoothie. Mine was mixed berries with matcha green tea and hers was peach mango. 


They make the most delicious sandwiches ever! I ordered a veggie delight panini that had pesto and olive tapenade with a pile of roasted mixed veggies. 




After an afternoon snack of apples and peanut butter, I went for a fairly long run (for me) on a trail by my house. It was incredibly hot outside. 


We then went to check out a new diner for dinner!
